½ tsp. kosher salt

1 cup (2 sticks) of unsalted butter softened

½ cups of granulated sugar

¾ cups of brown sugar

¾ cups of pumpkin purée

Beat on low power until the flour is fully mixed in and then add the chocolate chips. Once you’ve done that, stick the cookie mix into the fridge for half an hour. Scoop 1 inch (2.5cm) balls onto the baking trays, with two inches (5cm) between each ball, and bake for approximately 12 minutes or until browning lightly around the edges (but still soft in the center).
