  2. Fold in the cranberries, then turn the batter into a greased pie plate. Sprinkle additional fresh cranberries and sugar on top, then bake until the edges are set and a toothpick inserted in the center comes out clean.
  3. Preheat the oven to 350F. Spray a 9-inch round pie dish very well with cooking spray; set aside. You can use a glass pie dish; baking times may vary if using metal.
  4. To a large bowl, add 1 cup sugar, flour, cinnamon, allspice, salt, and whisk to combine; set aside.
  5. To a medium microwave-safe bowl, add the butter and heat on high power to melt, about 45 seconds. Wait momentarily before adding the eggs so you don’t scramble them.
  6. Add the eggs, extracts, and whisk to combine.
  7. Pour the wet mixture over the dry and stir to combine; don’t overmix.
  8. Add 2 cups cranberries and stir to combine; the batter is very thick.

What you’ll need:

cookie dough Reese’s peanut butter cups – the miniature-sized ones. M&Ms or Reese’s Pieces

Candy Corns

Candy eyes – you can find them on Amazon.

Chocolate – as the glue

Ingredients

16 oz Pillsbury premade Sugar Cookie Dough, raw (usually can be found near tube biscuits, cinnamon rolls, butter, and dairy products)

24 mini Reese’s Peanut Butter Cups

48 candy eyes

24 Red or Orange M&Ms or Reese’s Pieces

Candy Corns (100-125 pieces)

Chocolate, melted

Cooking directions

    1. Preheat the oven to 350 degrees.
    2. Grease 24 ct MINI muffin tin
    3. Divide cookie dough into 24 equal pieces. Place one cookie dough piece in each muffin tin cup.
    4. Bake for 9-11 minutes or until the dough is done. Centers of cookies will cave in slightly-this is normal.
    5. Let cookies cool for 3-5 minutes, then remove from the pan.
    6. Once removed, gently press a mini peanut butter cup in the center.
    7. Let cool fully.
    8. Once cooled, add decoration using melted chocolate (candy eyes, red or orange gobble, candy corn feathers).

Tip: If in a hurry, once you’ve put Reese’s peanut butter cups into the center of the cookies you can place them in the freezer to cool more quickly.

Pecan Pie Brownies

Ingredients

Brownies:

Use a boxed mix, or use the following ingredients for homemade brownies

1 cup butter (2 sticks), melted

3 cups sugar

4 eggs

1 Tbsp. vanilla

1- 1/2 cups all-purpose flour

1 cup unsweetened cocoa

1- 1/4 tsp. salt

1 cup chocolate chips

1 tsp. flour (for tossing chocolate chips)

Pecan Pie topping:

1/3 cup corn syrup

3/4 cup brown sugar

2 eggs

2 tsp. vanilla

1/4 cup butter, melted

1/2 tsp. salt

3-1/2 cups pecans

Cooking directions

    1. Preheat oven to 350-degrees
    2. Brownies (if not using a boxed mix)
    3. Sift the flour, salt, and cocoa and set aside.
    4. Add the butter, sugar, vanilla, and eggs (one at a time) to a large bowl. Mix together.
    5. Add the flour mixture and mix well.
    6. Sprinkle the tsp of flour over the chocolate chips in a small bowl and toss. Add the chocolate chips to the mixture and mix well.
    7. Pour into a greased 9″ x 13″ casserole dish and bake for 25 minutes. Set aside.
    8. Pecan Pie Topping
    9. Add the corn syrup, brown sugar, eggs, vanilla, salt, and melted butter to a medium-sized bowl. Mix together.
    10. Add the pecans and stir until all are covered.
    11. Pour over the brownies and spread out gently.
    12. Bake again for 25-30 minutes until done.

Portuguese Baked Apple Pie

6 baked apples

14 oz of puff pastry

5 oz of sugar

7 yolks

1/2 cup of cream

1 tablespoon of milk

Powdered sugar for dusting

flour to sprinkle

To prepare baked apples:

4 reinette apples

3,5 oz of sugar

a cup of port wine

4 sticks of cinnamon sticks

cinnamon powder q.s.

Cooking directions

For the baked apples:

  1. Wash and arrange the apples, removing the stone, as seen in the photo. Drizzle the apples with port, sugar, and cinnamon. Place a cinnamon stick in the center of each apple and place them in a preheated oven at 180ºC, for about 20 minutes or until they are cooked through.
  2. Remove apples from the oven, decorate to taste, and serve.

For the pie:

  1. After roasting the apples, allow them to cool, carefully remove the skin without breaking them and cut them into large pieces. Reserve.
  2. Roll out the flour-dusted puff pastry, line a tart, trim and cut the leftover dough into strips. Place the roasted apple pieces inside the pie.
  3. In a bowl, beat the sugar with 6 yolks and the cream, drizzle the pie with this preparation and arrange the puff pastry strips on top, as seen in the photo. In a bowl, mix the remaining yolk with the milk, brush the strips and the edge of the puff pastry, and place in a preheated oven at 180ºC for approximately 40 minutes.
  4. Remove from the oven, unmold and serve, warm or cold and sprinkled with powdered sugar.
